Colorful, nutritious sweet potatoes are given a special treatment that turns them into a spicy and delicious side dish. Make them as spicy as you like by adjusting the amount of cayenne in the recipe. They’re quite addictive on their own or served with rice and wrapped in a warm flour tortilla. This is one recipe that was hard to get photographed because everyone in the room was sneaking bites!

Ingredients
- 1 1/2 lbs. sweet potatoes (about 2 large sweet potatoes)
- 1 tablespoon maple syrup
- 1 teaspoon fine salt
- 1/2 teaspoon freshly ground black pepper
- 1/2 to 1 tablespoon chili powder, depending on the spiciness desired
- 1 tablespoon apple cider vinegar
- 3 tablespoons olive oil
Instructions
Prepare a large rimmed baking sheet by lining it with a Silpat, parchment paper, or aluminum foil. Heat your oven to 400 degrees F.
Peel the sweet potatoes and chop into pieces about 3/4” square, making sure that they're all approximately the same size so they cook evenly. Mix the rest of the ingredients in a large bowl and stir well to combine. Add the potatoes and stir until completely coated with the mixture. Pour the potatoes onto the sheet pan; separate the pieces so that they’re not touching. Bake the potatoes for 15 minutes. Take them out of the oven and flip them over with a spatula. Bake for another 10 minutes.
