Probably the freshest tasting and easy-to-make salad ever! This healthy quinoa salad is loaded with herbs for flavor and brightened with lemon juice and red wine vinegar.
You can use either red or yellow quinoa, but the red looks so colorful against the celery leaves and chickpeas. It’s a recipe that’s great for lunch or as a side dish at dinner. It keeps well due to the lemon juice and vinegar, but don’t think it will last long in your fridge. I love to bring this filling and nutritious salad to gatherings where I know vegan food will be scarce. Make it either canned chickpeas or those you’ve cooked from scratch; either way it’s delicious.
What You Need to Make Quinoa & Chickpea Salad With Herbs
- quinoa
- chickpeas, cooked from dried or 1 can, drained
- onion
- celery
- fresh tomatoes
- cilantro
- extra virgin olive oil
- fresh lemon juice plus lemon wedges for serving
- red wine vinegar
- salt & pepper
Did you know that quinoa is a superfood? It’s easy to cook, and is great either hot or cold.
Lately I’ve been cooking quinoa in my Instant Pot. It’s amazing how quickly and perfectly this method works. Just add 1 cup of rinsed quinoa and 7/8 cup of water to the Instant Pot. Cook on high for 2 minutes and let the steam release naturally for 6 minutes. Release any remaining steam. The quinoa will be fluffy and ready to use.

Quinoa & Chickpea Salad with Herbs
Yield 5-6 servings
A simple dish that's loaded with flavor. It's great as a side or on its own as a light lunch.
Ingredients
- 2 cups cooked red or yellow quinoa
- 2 cups cooked chickpeas, cooked from dried or 1 can, drained (garbanzo beans)
- 1 cup finely chopped onion (any color)
- 1 cup finely chopped celery
- 1 cup finely chopped celery leaves
- 2 cups diced fresh tomatoes
- 1 finely chopped bunch cilantro, stems included
- 1 tablespoon extra virgin olive oil
- 2 tablespoons fresh lemon juice plus lemon wedges for serving
- 1 tablespoon red wine vinegar
- 1 teaspoon fine salt
- 1/2 teaspoon freshly ground black pepper
Instructions
Cook quinoa according to package directions. (1 1/2 cups quinoa equals 2+ cups cooked)
Combine all ingredients in a large bowl and mix well. Taste and adjust for seasonings. Chill before serving.
