Crunchy, nutty, and loaded with just the right amount of cinnamon, this maple syrup-sweetened granola recipe is the result of my testing many (too many to mention!) granola recipes. Serve it on its own or mixed with vegan yogurt or even sprinkled on your favorite vegan ice cream. It’s simple to make, and its also great to make with kids. Just toast the oats a bit in a large skillet, mix them in a large bowl with the rest of the ingredients, and bake on a large sheet pan. Use gluten-free oats if desired.
It’s done in about 20 minutes when your kitchen fills up with the aroma of cinnamon and oats. Let it cool in the oven to obtain maximum crunch.

Ingredients
- 5 cups rolled oats
- 2 tablespoons ground flaxseed
- 1 cup raw almonds
- 1 cup raw walnuts
- 1 cup raw pumpkin or sunflower seeds or a combination of the two
- 1 cup unsweetened finely shredded coconut
- 5 tablespoons cinnamon
- 3/4 cup maple syrup
- 2 teaspoons vanilla extract
Instructions
Chop the nuts and seeds on a cutting board or in a nut chopper. (If you put them in a food processor, they tend to get cut up too uneven.)
In a very large (dry) frying pan, toast the oats over low to medium heat for about 5 minutes, stirring often as the mixture begins to toast and become fragrant. Add the cinnamon, flaxseed, coconut, almonds, walnuts, maple syrup and seeds; stir well with a large spoon. Toast for another 2 minutes, stirring the mixture occasionally. Take care to keep the mixture from burning.
Spread the mixture over 2 large rimmed sheet pans and bake in a 300℉ oven for 15 minutes. Remove the pans from the oven, and with a large spatula, turn the granola over a few times. Turn off the oven and put the pans back in the oven for 15 minutes. This will give you that added crunch that's so delicious. Let the granola cool before storing it in an air-tight container.
Notes
You can use sliced almonds in place of chopping raw whole almonds.
For a gluten-free version, make sure you are using gluten-free oats and flaxseed meal. These items are grown in fields that are not contaminated by wheat. Bob's Red Mill makes superior gluten-free products.
