Apple-Walnut Spice Cake

This apple walnut spice cake is so tender, sweet, and delicious.
Ingredients
- 1 cup unsweetened almond milk
- 1 teaspoon apple cider vinegar
- 1/3 cup sugar
- 1/3 cup unsweetened applesauce
- 1 tablespoon olive oil
- 1 teaspoon vanilla extract
- 1 tablespoon flaxseed
- 1 2/3 cups whole wheat flour
- 1/2 cup chopped walnuts
- 1 large apple, peeled and diced into 1/2" dice
- 2 teaspoons baking powder
- 1/2 teaspoon baking soda
- 1/2 teaspoon salt
- 1 tablespoon maple syrup
- 1 teaspoon cinnamon
- 1 teaspoon nutmeg
- 1/2 teaspoon ground cloves
- 1/2 teaspoon ground ginger
- 1 teaspoon vegan butter for greasing the pan (or use parchment paper to line the pan)
For the icing: (optional)
- 1/2 cup powdered sugar
- 1 tablespoon vegan butter
- 1 teaspoon cinnamon
- 2 teaspoons almond milk (1 or 2 more if needed)
Instructions
Heat the oven to 350 degrees F. Prepare an 8" x 8" baking pan by either greasing it with the vegan butter or lining it with parchment paper. Mix in a large bowl: the almond milk, apple cider vinegar, applesauce, olive oil, flaxseed, and vanilla. Stir well with a fork and let the mixture rest for about 5 minutes to thicken slightly.
In a large mixing bowl, stir together the flour, baking powder, baking soda, salt, sugar, cinnamon, cloves, and nutmeg.
Add the liquid mixture to the dry ingredients and stir just until combined. Add the apples and walnuts and stir again just to combine. Scrape into the pan and smooth the top. Bake the cake for 35 minutes.
The cake is delicious served on its own or iced. If you would like to ice the cake, sieve the powdered sugar to remove any lumps. Melt the vegan butter and add it to the powdered sugar, stirring until no lumps remain. Add the almond milk by teaspoonfuls until a spreading consistency is achieved. Drizzle or gently spread the icing over the cake.
