These yummy cookies have earned first place in our hearts here in the cabin. When we say “let’s make cookies,” this recipe is our first choice. Soft, slightly sweet, and loaded with chocolate chips, they’re easy to make and come out perfect every time.
Of course you can add raisins, dried cranberries, pecans, currants or whatever strikes your fancy, but the basic cookie we like best is walnuts, chocolate chips, and shredded coconut. Perfect with a glass of ice cold almond milk!

Perfect "cookie jar" cookies loaded with chocolate chips, walnuts, and raisins.
Ingredients
- ½ cup chopped raw walnuts
- ⅓ cup raisins
- ½ cup vegan chocolate chips (mini chips work best)
- ¼ cup shredded unsweetened coconut
- 2 tablespoons unsweetened plant milk (vanilla flavor okay)
- 2 tablespoons water
- 1 tablespoon ground flaxseeds
- ¾ cup sugar
- 1 teaspoon molasses
- 1 stick vegan butter
- ¾ cup whole wheat flour
- ¾ cup rolled oats
- 1 teaspoon vanilla extract
- 1 teaspoon baking powder
- ½ teaspoon baking soda
- ½ teaspoon fine sea salt
- 1 tablespoon cinnamon
Instructions
Heat the oven to 350℉. Line a large baking sheet with a Silpat or parchment paper.
Let the the vegan butter rest at room temperature until very soft. Mix together the flaxseeds and water for about 5 minutes, or until the flaxseeds are completely soft. Mix together the vegan butter, flaxseeds, vanilla, plant milk, and sugar.
In a large bowl, combine the dry ingredients and stir to combine. Add the sugar/vegan butter mixture and stir just until no dry ingredients are visible. Add the chocolate chips, coconut, raisins, and walnuts, and stir again until evenly distributed.
Scoop the batter into 1 tablespoon-sized balls or use a cookie scoop. Arrange the cookies 1" apart on the baking sheet and flatten slightly with a spoon or your hand. Bake the cookies for 12 minutes. Remove the cookies to a cooling rack.
Notes
Feel free to add or substitute dried cranberries, apricots, sliced almonds, chopped pecans or any of your favorite cookie ingredients.
