Vibrant with color and flavor, this luscious salad is made even better with the delicious maple seed crispies that you can eat on their own or crumble over the salad. The simple dressing is very light and minimal, because the berries contribute their own bright juiciness. The big treat here is not only the berries and greens, but the maple seed crisps. Addictive is to put it mildly, as you will probably make them a staple in your snack recipe collection.

Ingredients
For the salad:
- berries: your choice of fresh blackberries, blueberries, strawberries, raspberries, and/or cherries for a total of 3-4 cups of berries
- 1 star fruit, sliced
- 6 cups firm mixed greens (romaine and/or a mix of kale and romaine work well)
For the dressing
- 1 tablespoon white balsamic vinegar
- 1 tablespoons extra virgin olive oil
- 1/2 teaspoon agave nectar
- 1/2 teaspoon fine sea salt
For the Maple Seed Crisps:
- 3/4 cup raw sunflower seeds
- 1 tablespoon raw white sesame seeds
- 1 tablespoon chia seeds
- 2 tablespoons maple syrup
- 1/2 teaspoon fine sea salt
Instructions
Make the crisps a few hours before you want to serve them as they take a few hours to become crispy. Heat your oven to 325 degrees F. Line a 10" x 15" edged baking sheet with parchment paper or a silicone mat. Add the sunflower seeds in a single layer and bake for 5 minutes. Add the sesame and chia seeds; arrange the seeds in a single layer and toast for another 5 minutes until the seeds are fragrant. (Don't let them burn.) Add the maple syrup and salt to a mixing bowl. Add the hot seeds to the bowl. They will sizzle a bit. Stir well to combine. Put the parchment paper back on the baking sheet.
Pour the seed mixture onto the sheet and gently press into a single layer with a spatula. Put the seeds back in the oven for 10 minutes. Take them out and let them cool on the sheet for at least 30 minutes. They will become crisper as they cool. When they are cool, peel them gently off the paper or mat in chunks and store in an airtight container until needed.
Add the dressing ingredients to a bowl and whisk until combined.
Wash and dry the lettuce and put in a large bowl. Drizzle the dressing over the lettuce and mix well. Arrange the lettuce in individual bowls and garnish with the berries and star fruit. You can either crumble the maple seed crisps over the salad or serve them on the side.
