This crunchy slaw is a treat for picnics or as a side dish with veggie burgers.
Ingredients
- 1 small head green cabbage, sliced thin (about 5-6 cups)
- 1 large red pepper, sliced thinly and then again in half
- 1 cup thinly sliced red onion
- 1 small cucumber, peeled and chopped
- 3 tablespoons vegan mayonnaise
- 2 tablespoons apple cider vinegar
- 1 teaspoon fine sea salt (or more to taste)
- 1 teaspoon celery seeds
- freshly ground black pepper to taste
Instructions
Combine all ingredients in a large bowl. Mix well and let sit for at least 5 minutes. Taste and adjust for seasoning.
