A delicious side dish made with fresh snow peas, spring onions, and mint.
Ingredients
- 2 pints fresh snow peas
- 1 cup chopped spring onion or scallions
- 1/2 cup fresh mint, chopped
- 1 tablespoon olive oil
- fine sea salt, to taste
Instructions
Rinse the snow peas in a colander and drain. Cut off the top "cap" of the snow pea where it was attached to the plant's stem.
Heat the olive oil in a large frying pan. When it shimmers, add the onions and the salt and stir for a few minutes until the onions have softened. Add the snow peas, 1 tablespoon of water, and cook for about 2 minutes or until the snow peas have begun to soften. The snow peas should be cooked to a crisp-tender level but not limp. If the snow peas are very large or tough, lower the heat a bit and put a lid on the pan for a minute or two.
As soon as the snow peas are cooked, sprinkle the chopped mint over the peas and stir to combine. Serve hot with sprigs of mint on the platter to enhance the aroma of the mint.
