Dip into this lemony white bean hummus that’s a lovely spring green from the parsley and cilantro blended into it. Perfect with crackers or veggies, its also great as a substitute for mayonnaise on sandwiches. It’s great to keep on hand for snacks any time of the day, and it’s super healthy, too. Make it with beans you’ve cooked from dried beans, and you’ll be rewarded with a better result. I’ve been lucky enough to source giant white beans which cook up rich and creamy, but it will be fine if you can only find the small white cranberry beans. Soak the beans for at least 6 hours before cooking. Even quicker is if you have an Instant Pot; follow their directions and you’ll have your beans cooked from dried in about 35 minutes.
Rinse the beans and cook in fresh water for 60 to 90 minutes until creamy. Add the rest of the ingredients and process until smooth. That’s it! You’ll never buy commercial hummus again once you taste this recipe. Promise.

White Bean Hummus
Yield 2 cups
An easy recipe for hummus made with white beans.
Ingredients
- 1/2 lb. dried white beans
- 1 bunch parsley
- 1 bunch cilantro
- 2 tablespoons fresh lemon juice
- 1 tablespoon tahini
- 1 tablespoon olive oil
- 1 teaspoon fine sea salt (for the finished hummus
- 1 teaspoon Kosher salt (for cooking the beans)
- 1/4 teaspoon cayenne
Instructions
If using dried beans: An Instant Pot is great for cooking dried beans because you don’t have to soak the beans before cooking, and they cook in half the time. If you don’t have an Instant Pot, soak the beans for at least 2 hours before cooking. Drain the beans, put into a large soup pot with a teaspoon of Kosher salt, cover with water by 2" and cook for 60 to 90 minutes until the beans are soft.
While the beans are cooking, rinse the parsley and remove any tough stems. Rinse the cilantro well to remove any sand, and roughly chop the leaves and the tender parts of the stems.
Drain the beans, and put them in a food processor. Add the rest of the ingredients and process until smooth. Taste and add more lemon/salt/cayenne if desired.
Serve with crackers, warm pita breads, crisp vegetables, and olives.
