As a child I hated peas and especially pea soup; yucky colored mush with a greasy ham bone sunk somewhere deep in the pot… But now as a plant-based eater I know how wonderful peas are nutritionally. One day at our local bookstore cafe (the now-defunct Spiral Press in the fabulous Northshire Bookstore in Manchester, VT) their only vegan soup was split pea. Out of sheer hunger I ordered it and WOW! It was delicious- richly flavored and silky smooth. I decided to make my own version so I could have this lovely soup whenever I wanted.
After making two versions, one with green split peas and one with yellow, I realized that the yellow peas had a much milder pea taste, so now I prefer the yellow for soup. I think it even LOOKS better, too!

Yellow Split Pea Soup

A classic soup that never fails to be delicious!
Ingredients
- 3 cups dried yellow split peas
- 1 medium yellow onion
- 2 stalks celery
- 2 carrots
- 1 bay leaf
- 1 tablespoon extra virgin oliveolive oil
- 10 cups vegetable broth
- 1 teaspoon dried thyme
- salt and white pepper
- 1 tablespoon fresh lemon juice
Instructions
Chop the onion, celery, and carrot and saute in a large soup pot until tender, about 5 minutes. Add the peas, broth, bay leaf, the thyme and stir well. Bring to a simmer, cover the pot and lower the heat to medium-low. Cook for 45 minutes or until the peas are very tender.
Use an immersion blender to puree the soup until it is very smooth. You can puree it in a blender but make sure that the soup is room temperature before blending or you will have hot soup bursting out the the blender.
Check the soup for seasoning and add salt and white pepper by the 1/2 teaspoon until the soup tastes rich. If you have used commercial broth that was not low sodium, you may not need to add salt at all. Add the lemon juice to brighten up the soup just before serving.
Notes
When reheating this soup, you may need to add a bit of broth and/or water if it has thickened.
