It’s so easy to make granola, plus you get to put exactly what you want in your mixture. I love to make granola! You can control the amount of sweetener (if you use any) and once you see how easy it is to make it, you’ll never buy it again. It keeps well for weeks in a sealed container in your refrigerator. Add fresh fruits, berries, and vegan yogurt for a healthy meal any time of the day. You can substitute pecans or walnuts for the almonds, or any dried fruit for the apricot, but I think the almond apricot combination is just perfect, and even better, the apricots are loaded with iron. This recipe makes a large quantity of granola, so just cut the recipe in half in you don’t need that much.

Almond Apricot Granola

Ingredients
- 5 cups organic rolled oats
- 1 cup chopped raw almonds
- 1/2 cup raw sunflower or pumpkin seeds or a combination of both
- 1 cup chopped raw pecans or walnuts or a combination of both
- 1 cup shredded unsweetened coconut
- 3 tablespoons cinnamon
- 3/4 cup maple syrup
- 2 teaspoons almond extract
- 2 cups dried chopped apricots
Instructions
In a very large (dry) frying pan, toast the oats over low to medium heat for about 5 minutes, stirring often as the mixture begins to toast and become fragrant. Add the cinnamon, coconut, almonds, sunflower seeds, maple syrup and pecans; stir well with a large spoon. Toast for another 2 minutes, stirring the mixture occasionally. Take care to keep the mixture from burning.
Spread the mixture over a large baking sheet (you might need 2 baking sheets) and bake in a 300 degree (F) oven for 15 minutes. Remove the pan from the oven and add the apricots. With a large spatula, turn the granola over a few times on the pan to distribute the apricots. Let the granola cool before storing it in an air-tight container.
Notes
Adding the apricots after the baking keeps them soft. If you want to add other dried fruits, store them separately and add them just before serving. This method keeps the granola crisp and the fruits soft and chewy.
